Product Description

EXTRA VIRGIN OLIVE OIL LAUDEMIO "TENUTA I BONSI"

Three main Tuscan olive tree varieties are cultivated: 70% Frantoio, 20% Moraiolo, 10% Leccino.
The harvesting is carried out both manually, a technique commonly used for traditional olive oil production, and through the use of cutting-edge shaker machines used in new intensive production systems.
Olives are processed in the estate mill within 4 to 6 hours after harvesting. Thanks to the modern continuous-cycle system, processing temperatures can be set in order to implement a cold extraction (temperature < 27°C) which enables the preservation of superb organoleptic and nutritional qualities of I Bonsi extra virgin olive oil.
The attention and care at every production stage reflect on the chemical characteristics of final product: analysis carried out regularly on our olive oil show low levels of acidity and peroxides, as well as a high content of polyphenol antioxidants. Except for minor vintage-specific variations, the I Bonsi estate extra virgin olive oil is characterized for a vivid green color, a strong and bold aroma with a natural scent of fresh herbs, a round taste with an elegant artichoke flavor and a strong, spicy and bitter olive taste.
From the oil pressing carried out during the first two harvesting weeks, we select the fine Laudemio, literally the very best part of the harvest, certified after several thorough analyses and tasting tests.
