Traditional Balsamic Vinegar of Modena is produced under control of an indipendent Commission before being offered to the market and made exclusively with cooked local grape must. After a period of rest begin the long stages of maturation and ageing in small barrels of various woods (minimum 12 years for the “Affi nato” and minimum 25 years for the “Extravecchio”).
